All you need before you start is a glass baking dish and a meat thermometer.</p>
<ul>
<li>1 Pork Tenderloin</li>
<li>4-6 Russet Potatoes</li>
<li>Butter</li>
<li>Garlic Salt to taste</li>
</ul>
<p>Herb &amp; Mustard Crust</p>
<p>(I basically eye-balled all measurements <img src='http://www.isthatevenlegal.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  )</p>
<ul>
<li>1/4 c Grainy Mustard of your choice (I used a Deli Style with Horseradish added to it)</li>
<li>1 Tbl Onion salt</li>
<li>1 Tbl Rosemary</li>
<li>1 1/2 tsp Thyme</li>
<li>1 tsp Ground Sage</li>
<li>1 tsp Garlic Powder</li>
<li>1 tsp Black Pepper (can used fresh cracked peppercorns instead)</li>
<li>2 tsp Liquid Smoke (optional)</li>
</ul>
<p>Preheat oven to 350 degrees. (To me this is a magic temperature!)</p>
<p>Mix all the crust ingredients into a small bowl. In glass baking pan (I used 11 x 8 ) rub the tenderloin with the mustard mixture. Make sure to rub it into all sides. Let sit in pan.</p>
<p>In the mean while, slice the potatoes lengthwise into wedges. Place gently around the edges of the tenderloin. Top with pats of butter and sprinkle with garlic salt.</p>
<p>Insert meat thermometer into thickest part of loin and place into oven. Cook until you have an internal temp of at least 145-150 degrees.</p>
<p>By the time the loin is done the potatoes should be tender and will have soaked up many of the flavors from the pork juices.</p>
<p>I made this for dinner tonight! It was delicious!</p>

			<content:encoded><![CDATA[<p>Ok, so it&#8217;s been awhile. LOL! At any rate, I apparently married not only a redneck but a farmer. I am not (by any means) a city girl, but I&#8217;m really not a country girl either. So where does that leave me? Some where in between I suppose in typical suburbia&#8230; Where we have enclosed garages and a 4&#8242;x5&#8242; or smaller garden in our fenced in back yard growing typical things we like to eat, mainly tomatoes and herbs. We may have a pet or two, possibly a dog or something real exotic like a gerbil. Haha. We do not plant 3 acres of food and call it a garden, nor do we use heavy equipment (such as a tractor) to take care of it. We most definitely do not purchase our own livestock to raise from infancy just for the fun of it.</p>
<p>I, however, married a redneck, and I do use the term lovingly! No problems with being a redneck in my book! Jeff Foxworthy made it quite popular to claim redneck status. My favorite, of course, is Larry the Cable Guy. Who doesn&#8217;t love him?? Anyway, I&#8217;m drifting from my original point as I tend to do so bear with me. So here I am, typical weekend of cleaning the house, catching up on laundry, etc., etc.. When I receive a phone call from my husband that he has decided to buy some hens and a rooster so that we may have farm fresh eggs. Wonderful&#8230; I inform him that&#8217;s fine as long as the little monsters are kept away from me and he collects the eggs AND does not EVER expect me to get in the same area as these creatures as I am perfectly happy with the hormone chalked full, overly antibiotic medicated, maltreated chicken&#8217;s eggs you find in your local grocers refrigerated section. He agrees. Fine.</p>
<p>Upon his arrival home he does not show up with laying hens and a rooster but a box of baby chickens. Can I just say they are adorable! I&#8217;m still not getting in a pen with them, nor are they running loose in my yard. He also has the cutest little baby bunny with him! Awww the kids will love it are my thoughts&#8230; His thoughts? Fatten it up and it will make a good dinner some day. Sorry, honey, but that&#8217;s out of the question. I&#8217;m not eating that, nor am I cooking it.</p>
<p>Next thing he gets out of the truck? A calf. Yes, you read that right. It&#8217;s a dairy calf. Not only a dairy calf but a <em>male </em>calf. What good is a male dairy calf? Not that I would have milked a heffer but what was the point in bringing home a bull? A baby bull at that! This little guy still has to be bottle fed. Again, he&#8217;s adorable but seriously? <img class="alignright size-medium wp-image-153" title="Tae feeding the calf." src="http://www.isthatevenlegal.com/wp-content/uploads/2010/02/bottlefeeding-300x225.jpg" alt="Tae feeding the calf." width="300" height="225" />I&#8217;m sure ol&#8217; Jeff Foxworthy has a &#8216;You might be a redneck&#8217; joke out there for this that will encompass my entire situation. LOL!</p>
<p>The point of this little story? The next time my husband says, &#8220;Babe, I&#8217;m gonna go to the local auction with some friends.&#8221; My answer will be, &#8220;I don&#8217;t think so, hon. Not without me your not.&#8221;</p>

<p>Some things have changed in my life. I&#8217;m no longer single. I&#8217;m happily married as of October 10th, 2009! I married a great man and I&#8217;m proud to call him my husband. 			<content:encoded><![CDATA[<p>Its that time of year again. Super Bowl time! Everyone&#8217;s busting out the bowls of chips and dip and the little wienies for the party, right? Everyone&#8217;s cheering on their favorite team hoping that they win the big game. Soon we&#8217;ll see painted faces, painted signs and painted bellies from the stands. Let me ask you, what lengths would you go to in an attempt to show your team spirit?</p>
<p>Well two Arizona Cardinals fans showed their team spirit a little more than&#8230; umm, was legal on the unsuspecting Donovan McNabb, quarterback for the Philadelphia Eagles. You can read the whole story on <a title="Donovan McNabb's yard vandalized by fans" href="http://sports.espn.go.com/nfl/playoffs2008/news/story?id=3847672" target="_blank">ESPN</a>&#8216;s website, but basically it went as follows:</p>
<p>While at his off-season home in Chandler, AZ, McNabb was visited on several occasions by a couple of local pranksters. The two men apparently left silly things behind at McNabb&#8217;s house&#8230; One, a flag representing the Cardinals and the other was a box with some more fan-tastic statements written on them. Nothing obscene, just showing their excitement. Then they did something stupid&#8230; Their last prank landed them in with the cops. They used diesel fuel to burn cheers into the lawn. They caused much damage that McNabb could not ignore.</p>
<p>Here&#8217;s where they truly showed their intelligence. Remember the box that was left? The one with the writing on it? Well there was also an address label leading the cops straight to the prankster&#8217;s house!</p>
<p>Moral of the story? Don&#8217;t leave your address label on the box you intend to offend someone with!  Or was it, use someone else&#8217;s address label? No that wasn&#8217;t it&#8230; Maybe, something like don&#8217;t cause permanent damage when harassing a NFL quarterback. Oh wait, I&#8217;m sure it was obey the laws and keep your team spirit civil else you might end up in serious trouble&#8230;</p>
<p>So here&#8217;s to all you sports fans and keeping your team spirit under control <img src='http://www.isthatevenlegal.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

			<content:encoded><![CDATA[<p>This another one of those Long Over Due type of blog posts&#8230;</p>
<p>My son was born in November 2008! Everyday since has been marked with a lot of love, a lot of crying, a lot of diapers, but no more vomiting&#8230; at least from me! Jaered has had his days and nights mixed up since birth. Joy. Essentially I&#8217;ve been up most of the night and most of the day, considering my other two children sleep and play at normal hours and require my attention as well. <img src='http://www.isthatevenlegal.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  Isn&#8217;t it amazing how even though one can be completely worn ragged they still find the energy and strength to be there for their offspring. Well, it amazes me! Now don&#8217;t get me wrong I would LOVE to sleep at night. That would awesome. However, Jae is very colicky and there&#8217;s not much that comforts him at this point, and I&#8217;m ok with that. It&#8217;s just another hurdle we&#8217;ll get through together as a family. I&#8217;m just happy to have a healthy baby, no matter his gassiness LOL!</p>
<p>Jae&#8217;s a happy baby for the most part, aside from all the colic. He smiles often and coos when you talk to him, just as most babies his age do. His siblings adore him. Kae sometimes shows a little jealousy but that&#8217;s normal.  He loves his new brother but is definitely starting to show a little resentment towards having a new baby around. I think he&#8217;s feeling a tad bit &#8220;replaced&#8221; so I try to reinforce my love for him everyday. Tae is sticking true to her nick-name,  &#8220;Mama Tae&#8221;. She is constantly asking to hold him and is even wanting to change his diapers! Once she gets them open if there&#8217;s a hint of &#8220;poo&#8221; she immediately closes it back up and shouts &#8220;Mama!&#8221; Guess she&#8217;s not ready for that <img src='http://www.isthatevenlegal.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  I&#8217;m not ready for that!</p>

<p>My Wordless Wednesday picture was taken while spending the day at Reed Bingham State Park located in Southern Georgia. We were walking the nature trails getting some needed exercise. There was an awesome spot to look out over the water, which is where I was when I took the photo.</p>
<p>There&#8217;s a profound beauty in the swamps that you can&#8217;t find anywhere else. The way the Spanish Moss hangs from the trees and sways when a gentle breeze comes along is one of the most beautiful sights to me. Our trip was not that long ago so, due to the colder weather, we unfortunately did not see much in the way of wildlife except for a few squirrels and some buzzards flying high over head. But we were able to see where the gopher tortoises have laid there eggs, as they were marked by flags. I have been told that on occasion you can spot Bald Eagles as well!</p>
<p>We had a great time! The kids really enjoyed themselves and if I remember correctly it was one of the first times in the past few weeks that they didn&#8217;t fight with each other! We all know that is a rare treat!</p>

<p>Jaered, however, did not like riding over the roots that were growing up in the trails. He adamantly protested after a lengthy stretch of bumping about in the stroller. Next time we go I&#8217;m thinking I need to get a front carrier and carry him on my chest&#8230;</p>
<p>I would definitely recommend a visit to <a title="Georgia States Parks - Reed Bingham" href="http://www.gastateparks.org/info/reedbing/" target="_blank">Reed Bingham</a>. There&#8217;s more to do there than just walking the trails. They have a large play ground for the kids. There&#8217;s even a miniature golf course for your enjoyment. Many picnic tables, pavilions, and screened in buildings for gatherings. There is also camping, boating,  fishing, and swimming. You can go to the <a title="Georgia States Parks - Reed Bingham" href="http://www.gastateparks.org/info/reedbing/" target="_blank">Georgia State Parks</a> website to find out more.</p>

			<content:encoded><![CDATA[<p>It&#8217;s been so long since I&#8217;ve posted here. But today, I was inspired to start again.</p>
<p>Originally, I took a break from the Internet almost completely due to the monitor making me so nauseated during my pregnancy.  Well I had my newest addition to my family in November 2008! And I tell you what, he has been a handful ever since! I had forgotten what it was like to have a newborn. It&#8217;s all to quickly coming back to me!</p>
<p>Only recently have I been back online. Mostly to check email and keep in touch with long distance family and friends. But today something happened. When I checked my email I was notified I had recently received a comment on a post that was back in May of 2008 entitled <a title="Dating Single Mothers" href="http://www.isthatevenlegal.com/2008/09/05/dating-single-mothers/" target="_blank">Dating Single Mothers</a>. Intrigued, I read what the gentleman had to say, and I use the term &#8220;gentleman&#8221; loosely! I was so surprised by his anger towards single moms that I could not let his comment go without some kind of reply. So I logged in and approved it then sent my own reply. In all honesty I have to feel sorry for someone that is so obviously disgusted with a substantial percentage of the nations adult women.</p>
<p>So here I am. Sitting here, finding the time to blog again. I was excited by the fact that I&#8217;m being heard! I have a mysterious and very angry individual to thank for it. So I thank you &#8220;Carl&#8221; for inspiring me to come back to my blog and share my opinionated thoughts yet again with the online world!</p>
